Probably getting off the subject, better let you getback to your bike. You sure are starting from scratch there!!

Maybe a ratchet on the pedal for the rear brakes like a ride on lawnmower?

How do you plan on mounting the motor.
Usually the prop shaft has a flex coupling and is far enough away to keep the angle to a minimum.
The Live axle setup your big rear diff has will by bouncing a bit.
Will the motor cope with the vibration?

This shows the motor a bit further from the Diff:

That setup looks like its for and IRS (independent rear suspension).
I think I remember reading a post mentioning you will need a suspended seat.
So there is no rear leafs or coils.
It makes me a bit concerned. For you.
Braking and handling at over 60Km/h on most roads that aren't flat is going to be dangerous. Nothing to absorb a pot hole or a bump and you get flipped of the bike.
You don't want to be standing like a Jockey while your riding.
Maybe the Spring racing season has cluttered my mind.
Do you know of another trike with the same setup but maybe has a burner in it?

Why not use trailing arms to locate the wheel axle.
If they are hinged near the front(terminal box end) of the motor the the vibration in the motor will be dramatically reduced. And bonus, this is the end with the brushes.
As these motors already have big issues with internal structure when trying to spin to high revs, I can't see how having them vibrate by following the road contours when your going over 100k's is going to allow them to last.
Having the trailing arm hinged up near the front of the motor will also reduce

[Edit Okay my sketch they might buckle with that thruster]

just use a normal gearbox mount. They allow enough movement in all directions, and vibration damping.
I think a trailing arm setup would still work ok.
It'll have a lot of unsprung weight, but less than if the whole thing is unsprung!
Cable flex at the motor shouldn't be an issue if it's all properly strain relieved. If you sprung the battery pack it's going to have cable movement anyway.
