You'll need to take two readings, one where the car is fully charged. The other when the car stops. That will expose which cells are causing problems, and also whether the issue is balancing related

The high voltage into the motor should be a, b and c, three phase. There shouldn't be any connection to ground

Does the Curtis have a calibration routine? Either for motor or encoder or both

I wonder what capacity the battery is

I'm always leary when manufacturers quote range, more so on bikes.
The range at 40kmh is irrelevant, its the one at 100kmh that matters

having said that, now that we're able to fit 16kwh in a bike, even 200km range is possible

You should be okay for heat then. Battery box location is always a trade off. Low hanging battery box in the boot helps you retain much of the car interior space, at the expense of probably more work and possibly unfavourable weight distribution. All motors have a continuous rating, just stay below it. I have a 6.7" x91 motor in my shed that would normally be used in a daihatsu charade size conversion. That's rated to 14kW continuous.
